Storing

Grilled steak is always best when fresh. However, if you have any leftovers, store them in an airtight container in the fridge for up to 2 days. Before serving, you can reheat the steak or enjoy it cold in a sandwich, wrap, tortilla, or salad.

The honey butter can also be stored. Wrap it in parchment paper and keep it in the fridge for up to 7 days.

METHOD

    Preheat or light the grill. Make sure to create a zone with direct heat and a zone with no direct heat. Take the meat out of the fridge 1 hour before grilling.

    Season the steak with salt and pepper on both sides and set it aside until ready to use.

  • honey butter

    Place softened butter in a large bowl. Add chopped herbs, salt, pepper, soy sauce, garlic, and honey. Mix well with a spatula until combined into a smooth mixture. Place a sheet of parchment paper on your work surface, spoon the honey butter onto it, and shape it into a log. Refrigerate until ready to use.

  • grill and serve

    Place both steaks on the indirect heat side, or the cooler part of the grill. Grill covered for 8–12 minutes, or until the internal temperature reaches 40 °C (104 °F). Flip the steaks once during cooking. Then move the steaks to direct heat, or the hottest part of the grill. Sear for another 1–2 minutes on each side, or until a caramelized, golden crust forms and the thermometer reads 50 °C (122 °F) when inserted into the thickest part of the meat. Remove from the grill and let rest for 8–10 minutes. Serve with homemade honey butter.
